Coffe Cheese – Recipe

This type of coffe cheese is traditionally made in Swedish Lapland and Finland. Coffee cheese is made from milk (traditionally raw milk) and rennet. In June 2025, coffee cheese produced in Norrbotten, Västerbotten, Lapland, Jämtland, Härjedalen and Ångermanland received protected designation of origin in the EU. When eaten as is, the coffee cheese squeaks when you chew, which disappears when it is added to the coffee.

Coffee cheese is made from milk (traditionally raw milk) and rennet, which is heated, allowed to solidify into cheese curds, and then baked in the oven. Coffee cheese is a traditional Northern Finnish dish with ancient origins in Northern Finland and the Tornedalen region. Coffee cheese is also eaten in the rest of Norrbotten, Västerbotten and Lapland.

Coffe Cheese Ingridients

3 liters of milk
2 teaspoons cheese rennet
2 teaspoons salt

The best results will be if you get your milk directly from a farm.

When eaten as is, the coffee cheese squeaks when you chew, which disappears when it is added to the coffee. The taste is relatively neutral, not salty like many other cheeses.
