Chicken Dama – Sudanese Chicken Stew

The chicken is cooked in a blend of garlic and spices, and with lots of onions. Tomatoes are also used for this recipe, however, this time we cook the chicken dama with tomato paste instead. There are many ways to prepare this dish and this is one of the methods we can use.

Chicken Dama Ingredients

2 kgs chicken drumsticks (10-12 pieces)
4 large onions
1 cinnamon stick
2 teaspoons coriander powder
2 teaspoons cumin powder
2 tablespoons veg stock powder
2 tablespoons tomato paste
2-3 garlic cloves (crushed)
Salt
Black pepper
Canola oil (2-3 tablespoons)

You eat this with bread, non-savoury kisra, a northern Sudanese popular thin fermented bread, non-savoury injera (Ethiopian flatbread), chapati or any bread you prefer.
