According to legend, while stationed in Siberia, Pavel Stroganov’s chef found the beef to be frozen so solid that it could only be cut into small strips.

Beef Stroganoff Ingredients

1 tbsp vegetable oil
2 pounds beef chuck roast
salt and pepper to taste
1 tbsp butter
1/2 onion, sliced or diced
8 oz sliced mushrooms
2 cloves garlic
1 1/2 tbsp flour
1/2 cup white wine
2 cups beef broth, divided
1/2 to 1 cup creme fraiche or sour cream
1 tbsp fresh sliced chives

There are many variations of this recipe. Instead of buttered egg noodles you can use rice or fried potatoes. As always, you don’t have to follow the recipe slavishly – after all, it’s not a legal text. The recipe only serves as inspiration.
